Cottage Cheese Pancakes ahead of time to serve a group?

A.) Yes. Our Cottage Cheese Pancakes can be made a head of time and kept in a warm oven (170 to 200 degrees) until ready to serve. They will not dry out. These pancakes are also great cold as a high protein snack, and reheat easily in the microwave. |

Q.) Can Heidi's Pancake Mixes be made into waffles?

A.) Yes and no. Yes, the Sourdough and Blue Moon! Mix can he made into waffles.
The addition of 1 TBL. Of oil is optional. I use a good spray of pan coating. Our
Cottage Cheese and Oats n' Apple are too "sticky". The real apples and the Cottage
cheese tend to stick making it more work than it is worth.

Q.) Can you use any type of
cottage cheese to prepare your Cottage Cheese Pancakes?

A.) Yes, except dry curd. You can use 1%,2%, 4% milk fat, or fat free. What is nice about this mix is there is no fat in the mix. You can control the fat by choosing the fat content of the
cottage cheese you desire.

Q.) Can egg substitute be used?
|
|
A.) Yes. You may use egg substitute or egg whites in place of whole eggs in any of our mixes. You may have to add an additional egg white to the Cottage Cheese mix or 1-2 TBL milk for
the added moisture. |

Q.) I noticed on the nutritional label of your Cottage Cheese Pancake Mix that the facts are for the pancakes prepared with 2
whole eggs and 2% milk fat cottage cheese. What is the Nutritional content of the Cottage Cheese Pancake Mix alone?

A.) No. I am sorry to say at this time we do not have a recipe book available. We would appreciate any recipe ideas you may have. Once we acquire and develop recipes we will post them here on our web site. |

Q.) The
middle of my Cottage Cheese Pancakes seemed to be a little undercooked in the middle. What did I do wrong?
|
|
A.) The Cottage Cheese Pancake batter is very thick. It needs to be spread out to about a ¼" thick. I use 2 spoons and use a pulling motion from the center out. It is to be cooked on a low to medium heat for a longer period of time that regular pancakes. It will take about 5 minutes per side at 275-300 degrees.

Q.) Can I reheat your pancakes or refrigerate left over batter?
|
|
A.) Yes. You can simply microwave for approximately 15-20 seconds. The Cottage Cheese Pancakes reheat beautifully. Customers have told me they also use the toaster. Left over batter can be stored in the Refrigerator.
The Cottage Cheese Batter may be stored with out separating for up to one week, depending on the freshness date of the cottage cheese you used.
